wandering temp guage might be something as simple as teflon tape on the threads of the temp sender. The sender grounds through the housing to the cylinder head. Tape is not required because the threads are tapered, but many people use it anyway, but it just causes problems.
Not that you don't seem to have other fish to fry.

I've never had problems with teflon tape on those fittings, but I'll admit that it's a possibility. In my experience, the threads cut clean through the teflon, which is then forced into the thread valleys to improve seal... There is still metal-to-metal engagement.

Easiest way to verify 100% is to check continuity between the exterior of the sensor and the block beside it. If the resistance is less than 2 ohms(on your standard cheapo multimeter), you're gold.
